Meals in Pictures

We have not been as thorough this week in getting pictures of each meal, but wanted to share some of the meals we had this past week.
We picked up some chicken legs and thighs from the Amish market.  Will likes the whole thing with roasted broccoli and carrots.

Kylie prefers her meat peeled from the bone, we added some almonds to increase the fat content.

Dawn threw these together for breakfast one day.  Some leftover chicken, loose sausage, spinach, red peppers and onions, on a romaine leaf.  Topped with a sunny side up egg.

Kids dinner one night.  It does not take a whole lot.  If they want more, it's there(after they finish their broccoli) but they usually don't.

Dawn and I had the chicken with broccoli, a few left over brussel sprouts, cubed sweet potatoes and guacamole.

Sun dried tomato and basil chicken sausage from Trader Joe's, with a nice cabbage and apple salad Dawn got from a cool new book we will be reviewing soon called "How to Eat Like a Dinosaur"  Kylie's on the left Dawn's on the right.

Top round roast done in the crock pot with beef stock for 8 hrs, topped with pineapple salsa, avocado, roasted cauliflower and roasted asparagus.

More of the top round roast with shredded sweet potatoes for a breakfast hash.

Will had zucchini cakes with his chicken sausage.

Chicken breast with, roasted cauliflower, roasted asparagus tips(they will not eat the stalk) and grapes.

We rarely use recipes, but would be happy to tell you how we cooked any of the above.  We plan out which meat we are going to have each day, and vary our vegetables based on whats on sale and/or more fresh looking.  If we are roasting the vegetables, we put them on a baking sheet and brush them with melted coconut oil and put them in the oven at 350 for about 15 minutes.  Otherwise we cut them up and saute them in coconut oil until they are our desired tenderness. 

Hope the weekend went smoothly and you are prepped and ready to tackle week number 2.  The 30 days will be over before you know it.
